Eastern Rock Lobster

The Eastern Rock Lobster has a sweet taste and firm texture. Though naturally darker in colour, these lobsters turn a vibrant red when cooked. Sizing ranges from 800g to 1.2kg and they can be shipped live or frozen.

Fun Fact: Some chefs say this is the better Australian lobster when completing a blind taste test with its rival, the Southern Rock Lobster.
